*Chocolate Whole Wheat Brownies*

1. Preheat oven to 350*. Grease or spray 8" or 9" baking pan with non-stick spray.

2. In a bowl, whisk honey and butter until blended and creamy; whisk in eggs and vanilla.

1/2 cup (8 T) unsalted butter, melted
1/2 cup honey
2 eggs
1 tsp vanilla

3. Blend in small bowl:
1 cup whole wheat pastry flour, do not pack down flour
1/2 cup cocoa or carob powder
1.5 tsp baking powder
1/8 tsp salt

4. Stir dry ingredients into liquid ingredients. Stir in 1/2 cup chopped walnuts or pecans if desired.

5. Pour into baking pan. Bake in preheated oven for 20-25 minutes. You can also bake at 325* for 35-45 minutes, if desired. These get very dry if left in too long. Watch and check carefully at end of baking time. I always start checking them with a toothpick about 10 minutes before end of baking time.
