Two is totally fine; for large numbers of the world's children, this is perfectly normal

I'd go with German and Spanish for now, as I'm assuming the Greek he is interested in is ancient Greek (either classical or koine) rather than modern spoken Greek. (The written Greek in newspapers, etc. is similar to koine).

A child can handle two different spoken languages with no problem. Many can do more.

I personally think that the major benefits of Latin and ancient Greek are more logic stage benefits, and so those could wait. The "window" for a child's ability to "naturally absorb" the new sounds, etc of a foreign language lasts until about puberty. I took advantage of that with my dc. We waited till 3rd grade or later to start Latin.
