texts that only require a knowledge of algebra I.

Some that come to mind:
Conceptual Physics by Paul Hewitt
The Extraordinary Chemistry of Ordinary Things by Carl H. Snyder

And even Spectrum Chemistry if your dd does the the publisher's Math Bridge program before beginning the chemistry text & labs.
