... he isn't behind in 8th grade level grammar. Just pick up ANY *10th* grade grammar text and have a look. I promise.
Keep on with R&S would be my suggestion. Remember that grammar is only a *part* of a high school English credit. You should have appropriate writing (which would easily be book 7 R&S or something like Bravewriter online courses), literature, and vocabulary study.
R&S 8 is EASILY a 12th grade grammar text. (At least in the US public schools, with no disparagement of the schools meant -- it's just that the texts are *that* rigorous.) So if he finishes grammar in 10th grade via this text, you're ahead of the curve and can then just either review troublesome grammar as it appears in his writing in 11th & 12th or via test prep studies, or do grammar applications with his foreign language study.
I'd focus more on content; stick to the Name of the book (Building Securely, Rod and Staff Publishing or whatever) vs the Number (R&S 7) of the book when writing the transcript.
Relax. Instead of messing up, you did good, IMO. Grammar doesn't take years and years and years to learn, but it does take solid focus for a *few* years. And you've done that.
