"smelling" is a participle. Participles are one of the three kinds of verbals--which are words that are made from verbs but don't function like verbs in a sentence. "Smelling" here works like an adjective (actually, "smelling delicious" is a phrase that works together like an adjective to modify "turkey").
Another thing: "Dad" isn't a pronoun. It's a noun--a proper noun.
