This probably isn't quite what you were thinking of in terms of being easy to grade or something to squeeze in between other things, but you might consider Euclidean Geometry: A First Course (Solomonovich). Even if your son were only able to complete a portion of the text, he would learn a tremendous amount about deductive reasoning through proofs and constructions and you could credit him for the time he devoted to the subject.
There is a study group forming at the Classical Co-op that he could join if you were interested in this text. Perhaps the ability to discuss problems and solutions with other students would even excite him about the subject itself.
Euclidean Geometry at the Co-op is now open for anyone to join. You have to register in order to get in, but there are no fees involved and no participation requirements. Most students won't be starting through the text before September, but perhaps seeing how this sort of group is going to work might give you some ideas that you hadn't previously considered.
