If she's done Starting Points then she would probably be fine skipping Year 1. Although I think the Shaeffer Job tapes and the book Affliction are an essential part of year 1. You might be able to fit those in somewhere. I think the American History part is overly long in Year 2 - you might condense some of the readings. Also some of the tapes are just plain onerous. I tried to find other media (websites, book exerpts, etc.) instead of using some of the tapes. Oftentimes I would listen to the tapes and give a lecture over the materials.
As far as prepping for the class, I just essentially did the same program (same readings, etc.) but I used Spark Notes, Teaching Company videos, and other online resources to help with our discussions. We only met for 90 minutes each week, so these kids did work on their own - we spent the time in discussion or watching various videos or listening to tapes.
