Last year we had a loose schedule as well and all of the work got done on time. This year my husband fussed that he did not think it was good for them NOT to have a set schedule of days and times for classes. So this year I scheduled days and times for classes. That experiment lasted 2 weeks and it was the husband who cried foul.
So now we are back to the way that works. The twins have a syllabus for each class that lays out daily work. They are responsible for getting it done. They know when there are quizzes, tests papers due etc it is all written. There are no surprises. We find this works well.
