I think that an assignment like 'write about whatever you want' is too general for a lot of people, and leads to unfocussed writing.
I think that you would get a more accurate evaluation of their writing if you either
1. Assign them something specific and focussed to write about, or
2. Help direct them through a Topic Funnel a la Writers' Jungle before they tackle their first paragraph for you.
