You could record the class in the year it was finished. Or, say you did 1/4 credit of geography each year of high school. You could simply record that in each year's slot on the transcript. Or, if it took you two years to get through world history, simply put World History I and World History II in the years you did them, possibly putting the years studied or something like that (World History--800 BC to 450 AD).

As long as all the things you are doing are in the high school years (typically defined as the final 4 years before graduation), there should be no problem in counting it for credit in the year it is finished. The only problem I can see is if many of your courses are done this way--then the senior year might be top-heavy! In that case, I would do it the other way.
